Don't know what to do with all of those tomatoes spilling out of the garden? Suggestion, make a tomato pie. You won't regret taking the time to make and it taste much better than pizza pie. Fresh tomatoes from the garden verses a tomato sauce gives a more intense flavor, as well as all of those fresh herbs.



Recipe:   

1 (9 inch ) deep dish pie shell
2 large or 3 medium size garden fresh tomatoes
1 tablespoon All purpose flour
1/2 chopped vidalia onion
3/4 cup of mayonnaise
1/3 cup shredded mozzarella cheese
1/3 cup shredded sharp cheddar cheese
1/4 cup shredded parmesan cheese
7 fresh bazil leaves
2 teaspoons fresh oregano
ground pepper to taste
Optional ; crushed bacon bits

1. Preheat oven to 350 degrees F ( 175 degrees C ).
2. Bake pastry shell for approx. 8 minutes
3. Sprinkle tablespoon of flour on bottom of pastry
4. Chop onion and place in bottom of pastry shell, spread fresh bazil and oregano over onions   
5. Slice tomatoes and arrange over herbs, pepper to taste.
6.Option; Sprinkle bacon bits over sliced tomatoes
7. In medium mixing bowl, combine all shredded cheeses with mayonaise, stir to mix, spread  
    evenly over tomatoes.
8. Bake at 350 degrees F ( 175 degrees C ) for 20-25 minutes or until golden brown. Let sit for 10 
    minutes to cool, then chow down.

9. Last but not least;  Make more than one and freeze to eat later.
